Banana Ice Cream: Food Friday

I’m constantly asked to share my recipes. Honestly, I haven’t jumped on the idea because I feel like they aren’t anything special! But if you follow me on social media, specific Instagram stories, you know I’m trying to get better at sharing some food inspo with you. But you all keep asking for full recipes! So I’ve created this Food Friday Series. Every couple of Fridays, I’ll have a new recipe to share with you! I’m starting this Food Friday Series off with one of my most requested recipes…Banana Ice Cream! It’s one of my favorite desserts, but also a quick meal or a snack.  No refined sugar, nothing processed, and all the yummy nutrients.

Ingredients:

  • 3-4 frozen bananas (don’t forget to peel them before freezing them!)
  • 1/2 cup of almond milk (I like this kind)
  • Small handful of cacao nibs or chocolate chips
  • 3 spoonfuls of natural organic peanut butter (or favorite nut butter)

 

Directions:
Blend the frozen bananas and almond milk in a high-speed blender. My Vitamix works perfectly for this. It also can work in a food processor ( have this one), but I prefer the high speed blender.  The amount of almond milk that you need can vary depending on the size of your bananas. Use your judgment. When blended smooth, it should be pretty thick. Once blended, add in peanut butter and chocolate and pulse it a few times to get everything mixed evenly. Sometimes I just eat the banana & almond milk ice cream plain but adding in toppings is always my favorite.

Don’t be afraid to mix it up. Get creative! Frozen berries, nuts and cinnamon are also very good toppings.
