I absolutely love gardening—it’s one of my favorite hobbies. And let me tell you, there’s nothing better than enjoying simple, fresh food straight from the garden. One recipe that I always turn to is tomato bruschetta. You can find many different ways to make it online, but I’ve come up with a simple, straightforward, and quick method that never fails. If you need a gluten-free option, you can easily swap out the bread. So go ahead, dig in, and enjoy every delicious bite!
Ingredients:
– 2 pints of tomatoes
– 1 large handful of fresh basil
– 5 cloves of fresh chopped garlic
– 2 TB of olive oil
– loaf of bread or baguette
– a couple pinches of salt
Method:
Chop garlic and add it to a bowl along with the olive oil and let it marinate while you chop the rest of the ingredients. Chop the tomatoes and basil small and add it to the bowl with the garlic & olive oil. Toss well and add a few pinches of salt. Taste and if the garlic is overpowering, add more tomatoes & basil. If there isn’t enough garlic or salt, add more! Adjust to your taste. Slice the bread thinly and toast whether in the oven or in a toaster. Once the bread is toasted, top with the tomato mixture and serve immedialy. This makes a wonderful appetizer or a side to any meal.
