Let’s be real, we all want to eat healthy and get our vegges in but sometimes life is crazy and we just run out of time. Friends, I’m with you 1000% on that. Often times you’ll find me head down working in my office and then when I look up it’s already 7pm and dinner hasn’t even been thought about.
So in those moments, which happen frequently, I throw something quick together.
One of my favorite go-to meals is Veggie Pasta! Now, this can take any form you want it to take…with any veggies or pasta you have on hand! But here is one of the common variations I make because I usually have these things on hand.
Pasta from The Silo Pantry or Beet Generation Farms topped with sautéed onions and mushrooms, roasted broccoli, and fresh sunflower sprouts! I top it with the tomato basil marinara from Trader Joes and Minimalist Baker’s dairy free parmesan to top it off! Easy peasy!
